divide and conquer.
what i would do is group them according to skill level: beginning, intermediate, advanced (or since this is an all-advanced class: group 1, 2, 3 or whatever). can be only two groups if you think that is better.
to do this line all of them up and hit a few balls with each of them one after the other. after you finish evaluating one person, put them into one group until you are done with everyone.
now you can concentrate on one group at a time according to skill level. have the other groups hit with each other or do whatever drills you assign while you teach a particular group. after you teach one group you have them do whatever and you can teach the second group.
you can have one group practice serve while another work on returns (after you school them on techniques, etc..)
as to what games and drills to do, i have no idea lol.
